f you’re strapped for ideas of what to serve at your Christmas meal, don’t worry, we have recently been introduced to one of the most perfect side dishes ever to grace our plates. We give you, holiday parsnips.
Since your loved ones are probably all set on their yearly dose of mashed potatoes and green beans after their Thanksgiving feast, these delicate yet hearty veggies will be highly welcome at any holiday table.
Here’s what you’ll need:
- 4 ½ lbs parsnips
- ½ a bunch of fresh thyme
- 2 Tbsp runny honey
- olive oil
Start off by scrubbing and peeling your parsnips and slicing them lengthwise. Bring a pan of salted water to a boil and parboil the parsnips until they are fork-tender, which should take about 10 minutes. Drain those and then toss in a large bowl with the olive oil, honey, and picked fresh thyme along with a pinch each of nice salt and pepper.
Grab a baking sheet and spread your seasoned parsnips out into a single layer and roast them for about 40 minutes in a 400 degree F oven. These will be tender yet still have a bite to them, and the seasonings are earthy and perfect for those cold winter night spent with the people you love.
